Adjust valve clearance myself? 2.7l

So I've replaced my manifold by myself, cleaned the throttle intake, replaced header gasket and seals, cleaned air sensors, rebuilt my center console/arm rest, and replaced my entire front bumper and all parts supporting it. Besides oil changes and new spark plugs and wires - that's about it.

Can I, or should I, try to tackle my valve clearances? I hear the ticking and they've never been adjusted in 180k. I have a new valve cover (old one has very slight crack) that I need to put on so I have to go in there again anyways.

Can I do this? I have all the feeler gauges, correct torque wrench, some mechanical skills, and the ability to undo whatever I do.

I have read all the help pages and Toyota service manuals about doing this.

Besides the shims, do I replace other things while I'm in there like the lifters, valve keepers, spring retainers, springs, and seals? Do I try to clean my intake and exhaust valves?

The engine runs pretty damn good except my bad gas mileage and ticking from the current shims.

Any pages you can suggest to go step by step? I've seen the valve adjustment tech article on this forum and thinking about following this one.

And I just don't want to spend the funds on pressure tests.

Can I do it?

Naively I ordered the SST's that the FSM says to use. I tried with those for about 5 mins and then said screw it and pulled the cam.

Before I did the valve job, the biggest repair I had done was a clutch job and a header swap.
I'd say go for it.
