2" Lift - Biggest Possible Tire Size

What's the biggest tire I can fit w/a 2" lift? Would 285/75R16's stuff in there w/no rubbing?

no. 285s will never fit without rubbing until you trim and/or get different wheels. with 2" and LTD flares, that will be a challenge.
