Help me make up my mind about new tires

I am looking for replacement tires as my current ones are over 6 years old now and starting to show signs of age (apparently it's not safe to run tires more than 6 years old). I am running Michelin LTX M/S 235/75/15 on the base steel rims. The tires perform fairly well in rain and on unpaved roads, haven't had the chance to see the performance in snow and icy conditions. I am getting about 21-25 mpg with these tires. This being said, I can't help but think of 31x10.5 tires. I've seen some great deals on them locally. The 235/75s look tiny on the truck since I don’t have fender flares. This is my daily driver so comfort and mpg are priority. How much of a loss in mpg can I expect with 31" tires. If it is 1-2mpg then I wouldn’t mind upgrading to 31's. I am planning to take a road trip out east this summer as well so I definitely want to get newer tires befiore the trip. I could get a set of each, 235s for road trips and 31s for rollin' around town and weekend hiking trips but do I reaaaalllyyy need two sets of tires?. Appreciate any input. Thanks!

I know this question has been asked a gazillion times so I apologize in advance.

Well the 235/75s are basically 28/29''s.

So going to a 31 wont be that big of a deal but it will be noticeable. I had some Toyo open country A/Ts on before i got new tires, they lasted forever and they did well on gravel and snow.

They are kinda pricy but its worth it.

just get some good 31s and you will be set. the 31s are like 2'' bigger then the 235s. well 2'' taller.
