I will probably be back and forth from my truck to my computer for the next couple of days but for now, once I get it torn down and putting new head gaskets on should I use Permatex copper spray gasket on the heads?block?gaskets?all three?or none?

I did (just on the gaskets; you don't really want that stuff on the piston heads), and I had a good result. So if you're willing to take a sample of one, go ahead and do it.

take a sip of beer, and then next time some water... go back and forth with a shot of jack from time to time... helps with the cuts u get when wrenching...

also make sure u use Toyota factory head gaskets, dont use cheap ones. and also make sure u put the gaskets on the right side and right side up... just a couple things people mess up with.

If you do much of the drinking, you'll probably need to label more stuff, but you'll care less about it if you drink more. I lose track of underhood stuff so fast with a buzz...
