Carb rebuilding thoughts - 87 Hilux 4x4

I'm about on the last leg with my existing carb on my 87 Hilux 4x4. It needs starter fluid almost every time to get it going and at the moment I have a little duct tape aparatus keeping the throttle cable from going all the way down. (It stalls out if the throttle drops low enough. I don't want to spend $300. on a new carb if I don't have to but I've never rebuilt a carb before. Anyone who's done one before care to share your thoughts on the difficulty? I can get a kit for about $30. and I'm usually very handy. I can replace almost anything on a car. Just wondering if I could get in over my head here. There's a lot of parts on there. Should I try it?
