Do the gears now, that way if you decide to go to a larger tire later, you wouldn't be buying the tires and the gears at the same time, then.

31" from the factory ran 4.30 gears(right?), so a 225 tire with 4.88's would suck on the freeway, im gonna run the stock tire size when i get new tires i a month or so, the tires im running now have about 1/8" of tread left so its time for tires anyway.

Based on what you want to do with the truck, I'd go with 31x10.50s. You will have much better tire selection (for trail tires), I doubt you will notice much of a performance change (as others posted above).

I just swapped from my 33x12.50 summer tires to my 245/75 winter tires and barely notice the difference.
