is that fire damage on pine trees? The trunk looks green???

Looks like an Agave to me. Or Century Plant...

Yes, what you see there are the flowering stalks on an agave plant. I think this particular one is Parry's agave. Other types of agaves are what they make mescal and tequila from :)

There are tons of different types...
