Towing with deckplate results.
When I tow the bikes on the trailer, I always go slow enough that the truck doesn't have to downshift up every overpass. In my chevy and ford, they had a "passing gear" that would only go up about 1k rpm, but the yota goes all the way down to 3rd, raising it about 2.5k.
Anyway, pre-deckplate that comfy zone was ~65, I just drove about 10 hours this weekend at 85-90, without downshifting at all.
(remember that here in FL it is mostly flat, I did get to north FL though, where there were some hills)

See I found my results with the deckplate mod to be in a more negative light. My gas mileage was worse and I just hated it. Of course Im lifted and running 285 cooper STT's, but I did find that using the ECT when cruising on the highway or in cruise control while highway driving it doesn't down shift as mch. Much like you said.

You're towing at 90mph? Glad I'm clear across the country from you.
Anyway, I tow about 1700lbs regularly and found that turning the ECT on makes a substantial difference for downshifting (overpasses, etc).

My buddy (for what reason?) put tall dunlops on his runner and has been complaining about his mileage ever since.
That and the endless downshifting on anything other than flat ground.
It's a garage showcar runner that goes offroad a few times a year so I
warned him right off the bat.
Good friends never listen!

Thats nothing dude, try towing close to 4K 1500 miles. At the time i had the deckplate mod and MIT third gear all the way (auto) and going up hills and mountains sometimes in second.
