Larger Coil Springs... 2000 4Runner Ltd.
Would it be possible to fabricate bigger/taller coil springs for a 2000 4Runner Ltd. instead of spacers and body lift kits? (I'm looking for about 2 inches in height)

Yes it is possible and there are a few companies that can affordably make them for you. Someone on this forum posted a link to one company, I can't think of the name though.
BTW, The OME springs are taller and will give you what your looking for.

If you do a search in here you will find tons of info on this topic.
You have OME (890 or 891) & Downey to choose from.
Basically almost all of us 3rd gen owners run either. Remember to get longer shocks too.
Call Mike at X-treme off-road, he'll set you up.
EDIT: I wasn't sure, so I checked and Performance Products also carries both front and rear 1" lift springs for the 3rd gen as well (they actually give you more than 1" though). Talk to ALBPM, he ran this set up.
