Easy blue chips dinner with chili/cheese

Dinner one night yesterweek up at Mt. Rainier.

* One can of chili simmering on the Camp Chef Denali stove while I prepped the other stuff.
(I used Chilli Man Chilli, Vegetarian Black Bean)
* Tostito brand blue chips as a base.
* One whole avocado cut up laid on bed of chips.
* Chili poured over the above.
* One whole tomato cut up and spread around the chili.
* Fine Mexican cheese sprinkled over the top of mixture.

All washed down with a Henry's rootbeer.
Those blue enameled plates are deep, so while it did not look like a whole lot, I was stuffed afterwards and prime time for the black flies up there to make me their main course.
Had a few chipmunks too put their front legs up on the table across from me looking for handouts.
Not OK to feed them, and there was even signage on the table stating we had black bears in the area roaming around looking for food, and to make sure all food and garbage were not left out during the night.

Food tastes so much better when camping.



Also got to use the new Lodge 8" cast iron skillet up there for eggs.
First the hashbrown patty cooks on one side for 15 minutes, then flipped.
Then I added two breakfast patties to the mix and cooked them and the hashbrowns for ten minutes while flipping the patties half way through.

After transferring them to the plate, two jumbo eggs were added to the skillet and cooked sunny side up.
They rolled right out of the skillet, I am very impressed with cast iron so much now I use it exclusively at home and camping.

So is that the chipmunk's table on the right?

Looks good. And yes, food does taste better while camping

He he, I do not really remember where I got that little table.
I think some friends that the X and I use to camp with 25 years ago gave it to us.
It does say Mt. Rainier National Park on one of the bench tops too.
But the table has accompanied me ever since then on every trip I have gone on.

It is the perfect size though for a chipmunk.
Should have had my camera out when it put its feet up on the table edge.

I had a lot of stuff prepacked this time too.
I had the pancake mix in a baggy, so all I had to do was empty it into a bowl and and add one cup of water to it.
Saving a little time in camp makes it easier.

But yes, the whole fresh air, scenery, and even critters scurrying to and fro makes food taste better.
In a much more relaxed state of mind not thinking about computers, cell phones, what is on TV, ect.
And you get more done too without the distractions of everyday life.
