4.3 carb question.

I've got a 1989 toyota pickup with a 4.3 swapped in. I'm running a Holley 2 barrel 500 cfm carb.
Does anybody know or have an idea on what size jets to run to keep in from flooding out? It's got 70 something jets now and any kind of hill off road or little more than half throttle in mud it starts cutting out and flooding out and I have to wait 30 mins before It will start running well enough to go anywhere without it cutting out.
Any help will be appreciated. Thanks
