22r Operating temperature idle issue

Hi crew looking for a little help on this one.
86 with a 22r. It was a barn find had been sitting for 11 years.
Truck was sitting in a barn for 11 years did a little work to get it road ready.
New clutch master \slave cylinders
Brake pads all the way around, calipers and rotors up front
Brake fluid
New vacuum line (most of them)
Tires
Rebuilt Carb
New fuel pump and filter
Really good cleaning
Cooling flush and refill
I have been driving it for a few days and realized that the temp gage was not going up this was after flushing and refilling. Truck is running good.
I replaced the thermostat with a 195 degree one. The temp now goes up in the truck seems to run a little smoother.
Cold start truck is fine, idles up to a fast idle then will idle down on its own or if I kick it down it still will idle ok. Although seems a bit low
I can drive it for 2 mile or 30 miles with no problems.
Once I shut it off and restart the fun begins
Warm start cannot keep it running without feathering gas pedal. misses and hesitates.
No gas leaks out of AAP when vacuum line is removed.
Fuel shut off on carb is working correctly
Electric choke seems to be working correctly
It seems to me that something is sticking that is temperature controlled.
Any thoughts or advice.

I ended up purchasing a rebuilt on Ebay came pre adjusted bolted on. best $200 ever spent (there was a $30 off they time when I purchased.
If you return the core you get another $50 back. Runs like a champ.
I did a little research before purchasing and the seller performanceoverstock has the same address and phone number as national carburetor. When it arrived it was in a National Carb box.
