They're good bikes, good handing even though the suspension is not that adjustable, when your done with it on the street you can take it racin' too
Look at the CB600 Hornet, Kawi Z750 and the Yamaha FZ6 too. PS I bought a 2006 Speed Triple--It always best to ride Naked....

Suzuki gsx600 or 750 katana is waht im in the market for. Its a sport tourer very comfy to ride for longer trips and they are georgous bikes.

im gonna be honest im not a huge guy, and im pretty flexible, but i felt so cramped on the gsxr600, my ankles dont have a lot of flex in them, and shifting was hard for me on that bike

I think your confusing the GSX-R-600 and the GSX-600, the GSX (not the R) is more of a sport tourer it has an old school GSXR air/oil cooled engine, higher bars and lower pegs than the R. But its full fairing as opposed to being nekkid.

SV is a great bike and I am sure you will be happy with it. Great useable power, comfortable, easy to ride, and lots of aftermarket to hop it up when you get the itch.

I'll second the above response. SV650's are great bikes, good handling, great motor, fairly comfortable over the road and plenty reliable. I personally ride an 03 SV1000N and absolutely love it, this is my first V and the useable torque and personality of this motor blow away all the inline 4's I've had before. Not saying I'll beat a liter class inline, but out of a corner I might just leave them behind, not that I ride like that much. The SV650 will move right along, though it is not going to be a rocket, so that will work for you. I recomend a new model as they upgraded quite a few things recently, they now have the aluminum frame, liquid cooling and fuel injection IIRC. As for MPG, if I ride conservatively on my 1000 I can get about 50, normally I see a tad over 40, so I imagine a 650 will do even better.

I got a Yamaha
Well I picked up a Yamaha FZ6 back in 04 when they first hit the states and at the time I was on the fence between the SV650 and the FZ6, I ended up with the FZ6 due to a few things I prefered on it. Looks, rear under exhuast, and center stand to name a few things. Its a great all around bike and its only as fast as you twist your wrist but it keep up with many 600 or fast bikes out there. I didn't go with the SV due to engine type. Just to tourque for a better work for in the city riding or just slow ridding, also the bikes over all size seemed small to me maybe it was the smallish tires on the bike were the FZ6 has a nice setup and looks well balanced. Give it a look see and see what you think maybe even go sit on one if you can. I know there are always guys selling the 04-06 models as a good price on the forum I am on now and then.

Have you thought about a Buell? Check out the Lightings and Firebolts. Do a little reading about the new technology of the frame and swingarm. Also check out that in the last "100 best cornering bikes" comparison, Buell came in first...and second!

Triumph is coming out with a mini speed triple soon based on the 675 Daytona engine. It might be worth waiting for, but I'm kinda biased towards naked brit bikes.

I've owned a 94 Katana, 01 Gsxr-600, 04 gsxr-1000 and currently race a gsxr 840. I have ridden about everything you can think of. SV650's are really almost perfect for what you say you want. I've ridden one a few times. The rear suspension is very soft compared to most sport bikes. Which in turn will give you a very nice and comfortable ride, but don't expect it to perform (which it doesn't sound like you really care about that anyways). It does have some decent low end torque (obviously, it is a v-twin) but definitely ride one and ride an SV1000 to compare it to. The SV1000 definitely has a lot more usuable power and you are not working the bike quite as much to use it. I would definitely second getting one that is FI, you will thank yourself on a cold morning. Really what it boils down to is do you like the looks? Is the bike comfortable for you? And is it what you want? Fill that criteria and then just go have some fun. Oh and please please buy some good leather gear and a helmet.

Definitely look in the dealers bargain sections. I got a $300 helmet for $80 because it had last years graphics on it.
