Van's chicken & beans
Wanna make this up in a crock pot before you head out, but it'll heat up quick in the pot on your Coleman stove.
1 lb Pinto beans
1 yellow can El Pato sauce
1 can Hot Ro-Tel diced tomatoes/chili
A few diced up fire roasted Hatch hot chilis
About 1.5 lbs chicken tenderloins
1 med onion, diced
A little garlic, diced
A little season salt, pepper
Cook this up for a few hours until the beans are done. Nice, hot spicy, healthy, filling grub. Goes great with ice cold beer!
On the side of this, melt some shredded taco/Mex four cheese mix onto fajita size tortillas. Roll them up and dip into the beans/chicken.
You can unspice it up abit by using original Ro-Tel instead of the hot. Not sure why you'd want to, hehe, but it'll still rock. I've also added a can of diced fire-roasted tomatoes into this mix once and it came out good too.
