Easy side dish

These veggies go great with just about anything that you can cook while camping.

Foil (thicker is better for cooking these in the fire)
Olive oil (enough to coat veggies but not pool in the bottom)
Montreal Spicy Steak Seasoning
Zucchini (sliced into 1/4" slices)
Yellow Squash (sliced into 1/4" slices)
Onion (cut into 1/4's and separate layers)
White mushrooms
green onions
Head of garlic (peeled)

amount of each veggie depends on what you like and how many people you are cooking for. when my wife and I do this, we do 1 of each on the zucchini, squash and onion. 1 package of mushrooms and 1 package of green onions. This will give enough for 4 people to have a side dish portion. but trust me, these are fantastic and we always end up eating a lot more.

Prepare veggies as noted above. Make a foil boat big enough to hold everything. place veggies in foil and coat with olive oil and sprinkle steak seasoning to taste. Use more foil to seal the top of the boat and place in hot coals.

These should cook in 20 to 25 minutes depending on the heat in the fire. you will need to stir every 5 minutes or so to make sure the bottom veggies don't burn.

Veggies will be done when they turn soft enough to cut with a plastic fork. (onions will turn translucent, garlic will be soft, etc)

Time to enjoy! you can also do this recipe at home on the grill or in the oven.

sweet man. add a little meat in there and maybe potatoes and you've got 'camp foil packs' - i learned about those in cub scouts. even better with the pre-seasoned meat loaf you can get at a butcher - even tastier...now i'm hungry.
