Cheesy Breakfast Burritos

Makes 7-8 small burritos.
  • 5 eggs
  • 1/4 cup milk
  • 2 cups crumbled Italian breakfast sausage or chorizo
  • Shredded cheese (I use Kraft’s shredded Mexican blend)
  • Chunky Picante Salsa or Pico Di Gallo
  • 7-8 Small Flour Tortillas, I prefer the Guerrero brand

In a skillet, crumble and brown sausage. Combine eggs and milk in a bowl. Add the egg mixture to the skillet, scramble together. Add cheese and melt. Spoon into tortillas and top with salsa.

I would also toss in pork green chilli as a sauce option!

Chorizo y huevos is probably my favorite breakfast taco. The key to making them even better is warming up the tortilla in a skillet over low heat. A comal is much better than a skillet but are hard to find in the stores, even down here in S. Texas. Or find a tortilleria and get good thick home made tortillas which maybe difficult for y'all.

Remember to drain the chorizo because it really greasy.

If you can find it (I don't know how far their distribution goes), Boulder Sausage makes a GREAT Chorizo!
