How old is the fuel filter? Does it seem to have any problems idling? And, other than having problems getting up to speed, is there any hesitation or momentary cutting out?

Several things to check, and really we don't have much info to go on.
At ths point it could be trans related, rear end, engine, electrical, etc etc etc.
Assuming everything on the truck is OEM and in correct locations and operating ranges, I would start by getting an FSM and testing things like the TPS, AFM, and related electrical items.

Okay, well you said,"once the motor is up to temp" and "you have to wait for the motor to cool down". Is it trying to overheat? If not or if so, this is still a good indication the problem is engine temp related. Could be the O2 sensor.
