Has any one cut off the arm stops on their truck to gain travel if I do is there any down sides

That's not enough haha I'm thinking cut the whole brackets off at the frame

One can never tell. Low profiles are fairly cheap.

If you want long travel, you'll need to pay for it.
Cutting the bump stops off with stock length arms will only cause other things to bind and brake like the balljoints, CVs, tierods.
