Idle trouble/temperature question (3VZE)

So first off this relates to my 94 4x4 3VZE pickup

I was wondering what normal operating temp is for these trucks? I'm running about 195 regularly (mid-80's down here in NC right now) and when sitting in traffic I'll creep up to around 200 degrees. When I shut the truck off and wait about 15-30 minutes the temp will rise somewhere between 250-275. Does this seem pretty standard for these trucks? It makes since to me just wanted y'all's input.

2nd thing is from a cold start the truck starts fine, has a slight rough idle/acceleration but overall it's not terrible. After it reaches normal operating temp if you turn it off for 5-10 minutes it'll start right back up and act right. If you wait longer than that it'll have a real rough idle or just die altogether due to what seems to be an extremely low idle condition. Just curious what your thoughts are on this...

Just to add real quick I don't have any idle problems while idling in traffic or at red light/stop signs. It's just a temporary thing on warm start ups
