AP diaphragm leaking
So a couple years ago, I replaced the accelerator pump diaphragm and the AAP diaphragm as well (saved me from doing the full carb rebuild!) and she ran great. Now the AP diaphragm is leaking again and the dust boot coving it is completely shot. So I have two questions:
1. Should I be concerned that it failed after a couple years, as in, could there be some other problem that would cause this failure, or did I just get a cheap rebuild kit (likely).
2. I can get just the diaphragm from NAPA for $11, or the whole Walker rebuild kit from rockauto for $30, which includes a new boot. Is the boot worth the extra $?

Get the rebuild kit. You said you were saved from doing the entire carb rebuild a couple of years ago. While you have the carburetor off, look for linkage issues that may affect the diaphram movement. When you finish the rebuild you will know that ALL of the carburetor is now in good shape, including the dust boot that covers the AP. While the boot may not be worth the extra money, knowing the whole carburetor is good and has the dust boot ,to boot, gives you peace of mind. That makes it worth it.

The gasoline has changed since the old carb days. There are problems with carbs needing rebuilds because todays gas deteriorates the seals quicker. Hopefully the carb kits are using different materials that resist deterioration better.

Linkage could be the problem
Now that you mention it, with I put the pedal to the floor, it hangs up near the very end, and I really have to push it hard to get to go, and then it sticks for a second or two before popping back on it's own. I sprayed some WD-40 over all the linkage I could see, and it made a small improvement, but it's still there.

Fixed - mostly.
Got the rebuild kit, and replaced the diaphragm and the boot, and Voila! The sticking gas pedal also went away.
Still not getting a healthy squirt when stepping on the gas, though...
