Acceleration Issue when motor is cold

i have a 87 truck with the 3.0 in it with a five speed trans. my problem is when the motor is cold and untill it warms up the truck falls flat on its face while trying to accelerate. it sounds like its missing and it back fires if you give it to much throttle. last week my o2 sensor blew out of the exhaust, i noticed with it out i didnt have this issue the truck ran fine and seemed like it had more power. im lost so any help would be very much appreciated.

plugged cat. but usually u don't have power even after its warm.
