1991 toyota pickup

This truck has a v-6 and the problem it's having is when I check the oil the engines idles down and runs rough

you dont check oil with the engine running.

I realize you don't check oil with engine running we were trying to look for shirts on why its running rough just happens my son pulled dipstick out and it cut off we tried it again and same thing happened

First you need to make sure it's not that he's bumping the spark plug wires while pulling the dipstick. Or possibly rotating the distributor, if it's loose enough. It sounds like you've probably got some kind of ignition/plug wire issue. Less likely, but like I say possibly, timing.

Dirty or bad PCV.
Also when you pull the dipstick you break the seal and air flows through the crank case in into the intake (the hose on the drivers side valve cover) bypass the AFM.
If the PCV is bad then it lets more air to bypass the AFM.

One way I check for plug wire issues is in a dark shop or dark alley, with the motor running, look under the hood. I have seen several pretty blue sparks popping around where plug wires have been compromised.
