What Year/Model Toyota Pick Up Truck for....
I am looking for a Toyota Pick Up Truck where the engine doesn't have any electronic components.
With an automatic, 4X4, greater than 175 HP (preferably a V6), and greater than 18 miles per gallon if possible..... Any suggestions?

You're looking for a Toyota that doesn't exist.
Good luck!

The earliest V6 toyota 4x4 only had about 150 hp (3.0L) and is EFI (1988-1995).

Yeah, if you can find one. But still that is less hp and mpg than you asked for.
The things you want aren't helping each other. Any toyota that has enough power and mpg for you is going to have plenty of electronic things. Personally I would go with a tacoma or 4runner with a 3.4 in it already, but then you have electronic components. Otherwise you could go with an older truck with a 22r and get the mpg and less or no electronics and less or no power. Try to solve that and your spending a ton of $$$ and will lose the mpg. You can always swap a domestic v8 or v6 in too, but then your mpg suffer. See where this is going?

what do you have against EFI?! if you really want to deal with vacuum lines and a carb look for a truck with a 22r 79-84 is going to be your best best, but there were available up to 87.
OR, Find your self a truck with a 22re and i'll give you my 22r in exchange for your 22re and ecu. and learn to drive stick

I know in the 84-85 models they had a deisel. I'm not sure if it a turbo. but the parts are really hard to find. and so are the trucks.

You can drop a VW diesel engine (1.6 or 1.9 n/a or turbo, IDI engine, not the TDI) into a Toyota and have pretty basic engine. Only needs 12 volts for the fuel cutoff solenoid and the radiator fan and wiring for any senders for gauges or idiot lights as needed. A tuned up 1.9 turbo can do pretty good power and torque wise.
Although not sure if anyone makes an adapter for the automatics, they have them for the 5 speed gear box. Note that the Toyota automatics are electronic (ECT): - http://autoshop101.com/forms/h16.pdf You could get an older FJ40/55/60 and get a non-electronic engine, but gas mileage is not in your range. Although having owned an FJ55 with in-line-6 (F) engine and now a 4Runner w/ 22RE, I would take the 22RE any day. It is a really simple EFI setup, easy to work on and very reliable. And that engine/vehicle gets nearly twice the MPG of the old FJ55

get an old mid 70s yota pick up put the body on an early 80s yota frame, slap a v6 or small v8 in it and your good to go.
the 70s body is so you dont have to pass smog. the 80s frame is so you have a nice srontg frame with the sraight axle under it. and you get to chose the engine. if you want to keep it yota then go with the 3.4l engine gets good mpg and has good power, but it has electronics. or go with a chevy small block has tons of power and if you get the right year you wont have electronics but be prepared not to pass many gas stations. thats all the help i can be to you.

Another thing- around here at least its practically impossible to find an automatic 2wd, much less a 4x4 automatic, which IIRC, wasn't even possible until 1985?
Anyway, bottom line is, what do you want more? For example, you could get a hold of a 79-83, do some performance mods, and maybe get close to 150hp. Then you'd have little electronics, 4x4, but it would almost have to be a stick unless you swapped an automatic from a later year. Thats my suggestion.
