Because a lot of times, there isn't enough traction to overcome the ratcheting, so it acts spooled and won't turn (or oversteers/drifts like crazy).

In deep snow offroad, lockers are great.

If the truck is regularly driven on the road, and you don't deal with snow very much, and especially if other people are going to drive your truck, I x2 your thought of ARB in the rear. That way, daily driving, it's essentially stock and you never have to worry about the "quirks" putting your wife (or you) in the ditch.
